Recipe of the Week: Classic Southern Banana Sandwich

This week’s Outer Banks Life Recipe of the Week spotlights a southern staple that may raise eyebrows or even stir controversy: the banana sandwich.

Simple, nostalgic, and unconventional to most, the banana sandwich has long been enjoyed across the American South, utilizing three simple ingredients found in nearly every household, bananas, white bread, and mayonnaise of your choosing (No need to debate over Duke’s, Hellmann’s, or Kraft Mayo).

On behalf of a North Carolina native whose grandmother whipped these up at lunch time every spring and summer, The Outer Banks Life Content Director Kassidy Watson-Perry invites you to experience the medley of sweet, creamy bananas paired with the tangy richness of mayonnaise for yourself!

Ingredients:

  • 2 slices of soft white bread
  • 1 ripe banana
  • Mayonnaise

Directions:

  1. Spread a thin, even layer of mayonnaise on each slice of bread.
  2. Slice the banana into thin rounds and layer them evenly across one slice.
  3. Top with the second slice of bread, mayo side down.
  4. Gently press together, slice if desired, and serve immediately with plain potato chips.
