Recipe of The Week: 3-Ingredient White Wine Granita | National Wine Day

The Outer Banks Life is commemorating National Wine Day with another celebratory edition of our Recipe of the Week: white wine granita.

A granita is a semi-frozen Italian treat made by scraping frozen liquid with a fork to create light, flavorful ice crystals. Consider it the adult version of those classic Italian ices you’ll find in the frozen section of your local grocery store!

Combining crisp white wine, sugar, and fresh lime juice, it’s an easy and effortless way to cool off after a day on the sand.

Ingredients

  • 2 cups crisp white wine (such as Sauvignon Blanc, Pinot Grigio, or a dry Riesling)

  • 1/2 cup warm water mixed with 1/4 cup sugar (stirred until dissolved to make a quick syrup)

  • 1 tablespoon fresh lime juice (plus extra zest for serving)

Directions

  1. In a shallow dish (like an 8×8 baking pan or a glass container), stir together the white wine, the dissolved sugar water, and the fresh lime juice.
  2. Place the dish uncovered in the freezer for about 1 to 2 hours, or until the edges start to set and turn icy.
  3. Take a fork and scrape the icy portions from the edges toward the center, breaking up any large chunks. Return it to the freezer and repeat the scraping process every 30 minutes for the next 1 to 2 hours until the entire mixture has transformed into fluffy, glittering ice crystals.
  4. Spoon into small glasses and top with a little lime zest.

Switch it up! Want a red wine version instead? Swap the white wine for a light Pinot Noir or a fruity Rosé, and replace the lime juice with fresh orange juice.
